Our Trees:
Small but mighty! Our 4 Acre stand of natural growth pine contains trees ranging from a few years old to over 20. Our first harvest will be in approx 8 years (2029) in conjunction with our neighbors 7 Acres of planted pines. Our goal is to replant at that time with new Slash / Loblolly.
Mixed throughout the pines are small oaks and sweet gum that are currently being cleaned out and harvested for mushroom production.
Our Mushrooms:
Pine tree cover provides a perfect environment for cultivating Shiitake Mushrooms! Instead of burning or mulching the unwanted oaks and sweet gum, we are turning them into Shiitake logs. These logs are cut into lengths of 48" , inoculated with Shiitake spoors and stacked in the moist shade of our pines to colonize. Initial colonization takes anywhere from 8 - 12 months before the logs are ready to fruit. After colonization we can initiate fruiting at any point in the year with cold water submergence . This will allow us to fill orders on demand. Expect the first natural harvest in the winter of 2022.
